Famous the world over for sherry and for the horses that have been trained here to a standard unmatched anywhere in Spain, it is a city that repays a full day in a way that a quick stop on the road between Seville and Cádiz never will. TOMA & COE’s Spirit of Jerez is a private day tour from the Costa del Sol that gives you Jerez properly — with time, context and a guide who knows it well.
The day begins with a visit to a boutique sherry bodega — not one of the large commercial operations, but a producer of genuine character, where the centuries-old solera system is still worked by hand and the different styles of sherry (fino, amontillado, oloroso, Pedro Ximénez) are tasted with the care they deserve. Your guide will explain the extraordinary process that gives sherry its unique character: the way the Atlantic air finds its way into the cellars, the flor that protects the wine, the blending across multiple vintages that makes each sherry impossible to replicate elsewhere.
Next comes the Royal Andalusian School of Equestrian Art — one of the great equestrian institutions of the world, and the home of the celebrated Dancing Horses display. On Tuesdays and Thursdays, you can watch the full performance: How the Andalucian Horses Dance, a choreographed display of classical horsemanship set to music, performed by horses and riders who have trained together for years. On Mondays, Wednesdays and Fridays, there is no public performance, but the visit is arguably more intimate: you are shown into the stables, watch the riders in practice, and get closer to the horses and the craft than the show allows.
To wrap up the day perfectly, we taste some traditional tapas in a local restaurant, rubbing shoulders with Jerezano society and sampling platters of regional specialities.
